Freezer Mirepoix

 

INGREDIENTS

 

16 ounces onions, diced

8 ounces carrots, diced

8 ounces celery, diced

 

DIRECTIONS

I. arrange diced vegetables on a baking tray lined with parchment paper or a silpat mat in a single layer

II. place vegetables into the freezer and chill until frozen through completely

III. remove vegetables from the tray and store in a freezer safe jar and place back into the freezer

IV. when in need of mirepoix, scoop what you need from the jar and sauté from frozen

note: will keep up to a year frozen
