‘Nduja Toast with Shaved Green Bean Salad

INGREDIENTS

 

2 slices bread

5 tsp olive oil

2 oz ‘nduja

1/2 lb green beans

1/2 lemon, zest and juice

1 tsp fresh parsley, minced

1 tsp fresh chives, minced

salt, to taste

 

DIRECTIONS

I. heat 2 cups of water in a sauce pot with a steamer attachment. steam the green beans for 2-3 minutes then cool them in ice water. slice green beans thinly and place in a bowl with herbs, lemon zest and juice, and 1 tsp of olive oil. season to taste with salt

II. heat a skillet on medium-high heat with the remaining olive oil. toast each slice of bread until golden brown

III. spread ‘nduja on each toast and top with green bean salad

Born and raised in Detroit, MI, Amanda was always drawn to food. She observed how it had the power to bring people together, help us grieve the loss of a loved one, and nourish and repair us from within.
